Baking Soda-Bicarbonate of Soda (Sodium Bicarbonate) is 100% pure extra fine powder, which is aluminium and gluten free. Also known as “Baking Soda”, it is primarily used in cooking and baking, as a leavening agent. It reacts with acidic components in batters, releasing carbon dioxide, which in turn causes expansion of the batter, forming the characteristic texture and grain in Appalam, cakes, quick breads, and other baked and fried foods. Acidic compounds that induce this reaction include phosphates, cream of tartar, lemon juice, yoghurt, buttermilk, cocoa, vinegar, etc.
