Description The coconut palm has a straight, unbranched stem, with large, compound evergreen leaves that are pinnate, 4-6 meters long, with pinnae 60-90 centimetres long. The leaves are spirally arranged at the top of the stem. Rather than a nut, the coconut is classified as a drupe and it takes its name from the three indentations on its shell that resemble facial features. Crack the brown shell to find softer, white flesh within and a hollow centre containing a sweet liquid known as coconut juice or water. It adds a creamy flavour to spicy curries and soups and can also be used as a dairy substitute. Coconut milk is popularly used in many dishes from Southeast Asia.
